Tomato Sauce with Benefits
Our seasonal Leafy Greens Sauce is loaded with more fresh kale and chard than ever, making this the most vitamin K packed sauce we produce at the Saucery!
All the kale and chard for our first 2022 batch is from Greenmarket’s own Grandpa Farm. We work with these folks a lot since their produce is exceptional in both flavor and color (so much vibrant color!).
This sauce is one of our oldest, too. We started producing our ‘tomato sauce with benefits’ in 2014 and we’ve kept at it since because so many of you love it. Our kale of choice is the Curly variety since it is easier to work with and pairs well with fresh tomatoes. Chard adds sweetness the sauce needs and organic miso ties it all together. Honestly, you wouldn’t enjoy this sauce without the miso. It just works and we never question any recipe that works (and you shouldn’t either).
Kale had its 15 minutes of fame already. Remember that trend? Kale got a bad rap too. Still does! Here’s the thing: kale (all varieties) is a delicious vegetable and a healthy one too. Cooking with it can be tough at times since each variety has its own specific flavor profile and depending on what you’re cooking up should dictate the variety of kale.
Don’t just use any! For example, Red Russian and Curly kale are delicious raw in salads but they’re also great to saute with garlic and onion as a base or all on their own. We only use the Curly kale variety with our Leafy Sauce because of its neutral flavor and easy-to-handle shape.
Look we get it, food trends can be annoying and kale was a big part of that annoying trend (unfortunately) but don’t let that steer your decisions on whether you should kale or not kale. Give our Leafy Greens Sauce a shot. We call it our ‘tomato sauce with benefits’ for good reason and you know we wouldn’t jar just any sauce. If we don’t love it ourselves, we don’t jar it!

Cooking tip: if you stir coconut oil into your kale it makes it easier to scrape it into the trash! Aren’t you glad we only use extra virgin olive oil?
