Green Eggs, No Ham


For today's lunch at the Saucery we're cooking up a quick and easy 30-minute Shakshuka-style, Mexican-inspired meal: Green Eggs, No Ham! We will be using our seasonal Roasted Tomatillo Salsa (aka Salsa Verde), made with roasted tomatillos and jalapeños to cook the eggs in, along with queso blanco and soft tacos for dipping and serving.


SERVES 2-4


INGREDIENTS

1 jar Roasted Tomatillo Salsa
4 farm fresh eggs
1 cup shredded queso blanco*
1/4 cup fresh cilantro (plus more for garnish)
4 soft tacos

salt and pepper

*can substitute with feta, halloumi, monterey jack or any soft farmer’s cheese

PREPARATION

Shred half a block of the queso blanco. Set aside. Roughly chop the cilantro. Set aside.  

Pour the whole jar of salsa verde into a medium size pan over medium heat and bring to a simmer (2-3 minutes). Crack open each egg carefully over the simmering salsa, spreading them evenly. Now would be a good time to add some salt and pepper (as needed). Cover pan and let cook for a few minutes.

Add shredded queso blanco and cover for another minute, until eggs are done to your liking. Remove from heat and serve with soft tacos.
