For today's lunch at the Saucery we're cooking up a quick and easy 30-minute Mexican-inspired meal: Salsa Chicken Tacos! We will be using our Ugly Salsa to turn this boneless chicken thighs recipe into a taco filling so rich and delicious, it will make you forget all about dipping chips on taco night. Just make sure you have enough corn tortillas!

All it takes is a quick sear of the chicken and then a quick simmer in the salsa, which already packs all the flavor and smoky chipotle aroma, to have a taco night you will want to repeat week after week. Buen provecho!


SERVES 4

MADE WITH UGLY SALSA


INGREDIENTS

1 (16oz) jar Ugly Salsa
1.5 lb boneless chicken thighs
1 tbsp vegetable oil
2 tsp cumin
1 cup cheddar cheese (grated)
1 cup sour cream or crema
1 avocado (sliced)
corn tortillas
fresh lime
fresh cilantro
sea salt to taste

PREPARATION

Thoroughly dry the chicken thighs with a paper towel, then season on both sides with salt and half of the cumin. Heat the oil in a medium pan and sear the thighs over medium-high heat for about 6 minutes on each side, until golden brown.

Remove the thighs from the pan and set them aside. Lower the heat and add the jar of Ugly Salsa to the pan to deglaze. Stir and scrape all those good bits until salsa is bubbling and heated through. Add the rest of the cumin, stir, and cover.

Meanwhile, roughly slice the chicken into 1/2-inch pieces and add them back into the pan with the salsa, juices, and all! Add about 2 tablespoons of water and mix well. Simmer for about 10-15 minutes stirring occasionally until most of the moisture has cooked off and the chicken is nice and tender. Remove from heat and get the rest of the ingredients ready to build your tacos.

Start by warming up your tortillas on a clean cast iron pan or griddle. Then lay them flat and start with a helping of the chicken, then cheese, then a couple of avocado slices. Top with a dollop of sour cream, a bit of cilantro, and a squeeze of lime. Super easy! And customize it to your liking. Buen provecho!
