Spicy Calabrian Chickpea Beach Salad
It’s HOT outside so if you’re heading to the beach to cool down you’ll need something easy, cool, and simple to mix and pack up. Today at the Saucery, we're tossing a quick, easy, and tasty beach salad: Spicy Calabrian Chickpea Salad (oven not required).
Our Spicy Calabrian Sauce has everything you need to create a delicious salad: capers, olives, scallions, basil, and fresh Calabrian chilies. Just add some Greek feta and fresh parsley and mix before packing this deliciousness up inside your favorite on-the-go container.
SERVES 4-6
INGREDIENTS
1 jar Spicy Calabrian Sauce
2 (15oz) cans chickpeas
1 block (7oz) Greek feta cheese
1/4 cup fresh parsley
extra virgil olive oil (optional)
PREPARATION
Drain the chickpeas, and in a medium saucepan, heat them up over high heat stirring continuously. Once the water is cooked off, add the jar of Spicy Calabrian Sauce, lower heat, and allow to a simmer. Cook, uncovered, for 10-15 minutes or until thickened.
While the sauce simmers, chop the whole block of feta into small chunks and mince the cilantro.
Remove the chickpeas from heat and transfer to a heat-proof mixing bowl. Add the feta, the cilantro and mix well.
If the mixture feels too dry, add a drizzle of extra virgin oil.
Transfer the mixture to an air-tight container and refrigerate for up to 4 days.
Serve chilled or at room temperature along with crusty bread, crackers or your favorite chips.
