Easy Tomato Basil Soup
Tomato soup is comforting—but Tomato Basil Soup gives a big, warm hug!
With our Ugly Tomato Sauce, making this classic soup has never been easier. Crafted with overripe tomatoes, onions and fresh basil, our Ugly Tomato Sauce is an easy (and clean) shortcut to a rich and flavorful Tomato Basil Soup. Just add a couple extra ingredients like rich butter and in just 30 minutes, you’ll have a creamy-dreamy bowl of goodness. Pair it with some crunchy garlic bread and enjoy every last spoonful of this classic (and sorta modern) soup dish.
Serves 2-4
INGREDIENTS:
1 jar Ugly Tomato Sauce
4 tbsp unsalted butter
1 (medium) onion, cut into wedges
2-3 garlic cloves, smashed
1 1/2 cup vegetable stock (or water)
1/4 cup heavy cream, plus more for serving
1 tsp salt, or more to taste

PREPARATION:
Melt the butter over med-high heat in a medium saucepan.
As it starts to bubble, add onion wedges and garlic. Sauté for a couple of minutes, until fragrant.
Add the vegetable stock, the jar of Ugly Tomato Sauce and salt. Cover and bring to a boil
Lower heat and simmer, uncovered, for about 30 minutes. Stir occasionally.
Blend the soup using an immersion blender (or regular blender*) until creamy, and season to taste.
Stir in the heavy cream. Optionally, add a swirl of heavy cream (about a tablespoon) into each plate before serving, and include a slice of toasted garlic bread to accompany the soup.
* HOT TIP: If using a regular blender, do it in parts, don’t fill it too high, since hot liquids expand! Remove the lid’s center and cover the opening with a folded kitchen towel while blending to release steam and prevent messy and potentially harmful splatters.
