MADE WITH SPICY UGLY SAUCE


INGREDIENTS

1 1/2 cup spicy Ugly Sauce
2 large zucchini
1 cup ricotta
1 egg
1 cup mozzarella, shredded
Salt Pepper

PREPARATION

Preheat oven to 350ºF. Slice zucchini lengthwise, using a mandolin if possible, into 1/4 inch strips. Toss in a bowl with a drizzle of olive oil, salt and pepper. (Let sit for 10-15 minutes for zucchini to soften and become easier to work with).

Mix ricotta, egg, 1 tsp salt and pinch of pepper in a small bowl. Spoon 1 TBSP onto bottom of one zucchini strip at a time. Roll the strip from bottom to top to seal the ricotta on the inside.

Pout half of the tomato sauce into a medium oven safe baking dish ( I used a cast iron skillet. Turn the roll up on their side to fit in the pan. You don’t want any empty spaces so be sure to choose a pan that they fit snugly in. Pour on the rest of the tomato sauce evenly. Cover and bake for 50 minutes.

Remove from oven and uncover. Top with remaining cheese and broil on the second highest oven rack for 5-8 minutes until golden brown.

Serve with pasta if desired. Enjoy!
