MADE WITH UGLY TOMATO SAUCE


INGREDIENTS

1 cup Ugly Tomato Sauce
1 onion, sliced
1/2 lb mushrooms, chopped
1/4 cup red wine (optional)
1 can chickpeas, drained and rinsed (If using dried - soak and cook first, then weigh out 15.5 oz)
1 bunch spinach
Olive oil
Salt

PREPARATION

Heat a drizzle of olive oil in a large pan. Add onion and cook for 3-5 minutes. Add a little more oil, followed by mushrooms. Stir and cook for 5 minutes. Add red wine (if using) and cook for another 2 minutes.

Add in chickpeas. Pour in Ugly sauce and 1 cup water. Bring to a simmer over medium heat and let cook for 10-12 minutes.

Add spinach on top and cover for 1-2 minutes to wilt leaves. Stir to incorporate evenly throughout. Season to taste.
