Toasted Fregola Pasta

Closer to couscous but bigger in size and more of a bite. Fregola pasta is rubbed by hand and dried under the Mediterranean sun on the southern Italian island of Sardinia. It has an irregular, pebble-like shape with a coarse exterior that grips sauces and broths deliciously. This particular Fregola is toasted giving it a yummy and nutty flavor that tastes like it’s fresh out of the oven.

Cook it like you would conventional pasta, in salted water or simmer like risotto for a creamy texture. We mix this pasta with any of our tomato sauces but it really shines when it’s tossed with our Tomato ‘Nduja which pairs beautifully with soups and stews. Makes for great pasta salads too. Enjoy!
