Baked Cheese Grits with Shrimp

SERVES 4-6


MADE WITH UGLY TOMATO SAUCE


INGREDIENTS

1 cup Ugly Sauce
1 cup grits
4 cups water or chicken stock
1 cups shredded cheddar
2 TBSP butter
1 lb shrimp, peeled and deveined

Chili flakes or chopped parsley (optional)

Salt & Pepper

PREPARATION

Preheat oven to 350º.

Combine grits, water and 1 TBSP salt in an 8 x 8 baking dish. Cover and bake for 1 hour.

With 10 minutes remaining, season shrimp with salt and pepper. Heat a drizzle of olive oil in a large pan over medium high heat (big enough to fit shrimp in one even layer.) Add shrimp and cook on first side for 2-3 minutes.. Flip shrimp in the pan and cook for 2-3 minutes more. Remove from pan.

Remove grits from oven and uncover. Stir in shredded cheese and butter. Return to oven for 10 more minutes.

Combine Ugly sauce with 1/2 cup water. Heat over medium and simmer for 4-5 minutes until slightly reduced. Toss shrimp back in the pan to coat with sauce.

Season grits to taste with salt and pepper. Serve shrimp over grits. Top with chili flakes or chopped parsley if desired.
