Corte d’Assise Sauce

Corte d’Assise (COR-teh dah-SEE-zeh) is a Calabrian classic since 1958.

The story goes, one night at the Ristorante da Rocco located in the town of Goiosa, as the chef was closing, a few judges showed up, famished. They asked him to serve them something Calabrese. (Calabria is well known for its spicy dishes) The chef decided to create a spicy tomato sauce with spaghetti right on the spot and one of the judges liked it so much that he had seconds. When the judge asked the chef what the dish was called, he said that it didn’t have a name yet, he had just created it on the spot. The judge then insisted on naming it Spaghetti alla Corte d’Assise.

In Italy, the Corte d’Assise is the court system that deals specifically with serious crimes like murder, terrorism, and enslavement. This judge, who worked in the Corte d’Assise thought that the name was appropriate, as the dish contained so many chili peppers making the heat level intense and merciless like his criminal court job.
