Garlic Scape Bread

Garlic scape season is short, but with our Garlic Scape Pesto, you can enjoy its subtle, garlicky charm in the most delicious way: slathered on fresh bread and baked until golden and bubbly. This recipe is as easy as it is satisfying. Perfect as a summer appetizer, alongside soup or salad, or as a fun side to your favorite pasta dish.
Our pesto combines locally harvested garlic scapes with chickpeas, cashews, lemon juice, and extra virgin olive oil for a creamy, balanced spread that’s just the right amount of garlicky without being overpowering. All you need is a good loaf of bread, a few spoonfuls of pesto, and a quick trip to the oven.
Pro tip: Finish with a drizzle of olive oil and a sprinkle of grated cheese for a rich, savory bite every time.
Serves 4-6
INGREDIENTS:
2-3 tbsp Garlic Scape Pesto
2 rustic loaves or baguettes
2-3 tbsp extra virgin olive oil, plus more for drizzling
(Optional):
Grated Pecorino Romano, for finishing

PREPARATION:
Preheat the oven to 375°F.
Prepare the pesto drizzle: In a small bowl, mix the Garlic Scape Pesto with 2–3 tablespoons of olive oil until spreadable. If it's too thick, microwave it for 15–20 seconds to loosen.
Slice the bread in half lengthwise, then place on a baking sheet cut-side up.
Spread the pesto mixture generously over each half of the bread, ensuring even coverage. Add an extra drizzle of olive oil on top for extra crispiness.
Bake for 10–12 minutes, or until the edges are golden and bubbly.
Finish and serve: Remove from the oven and drizzle with additional extra virgin olive oil.
If desired, sprinkle with grated Pecorino Romano while still warm. Slice and serve immediately.
