Summer Bean Stew
This Summer Bean Stew is proof that a hearty, wholesome meal doesn’t have to take all night. Just 3 components, 15 minutes of prep and you’re done! Made with our Roasted Eggplant Sauce, all the rich flavor is already built in, so you don’t need to fuss with extra seasoning (we’ve done the heavy lifting for you!). Just mix, heat, and serve up a delicious, kid-friendly dish that’s perfect for busy weeknights or anytime you need a quick, comforting meal without the stress.

INGREDIENTS
1 (26oz) jar Roasted Eggplant Sauce
2 (15oz) cans Cannellini beans, drained
5-6oz fresh spinach
Optional:
Extra virgin olive oil, for drizzling
PREPARATION
Heat the sauce: Add the entire jar of Roasted Eggplant Sauce to a wide saucepan. Cover and warm over medium heat until it begins to bubble (about 5 minutes).
Add the beans: Stir in the drained beans, mixing well to coat them in the sauce.
Add the greens: Add the spinach, cover again, and allow it to wilt (about 5 minutes).
Blend the flavors: Uncover and stir everything together for another 5 minutes, until the flavors are fully combined.
Serve and enjoy: Ladle into bowls and finish with a drizzle of extra virgin olive oil. Serve warm on its own, with toasted bread, or as a hearty side dish.
