Strawberry Gazpacho

Bursting with sweetness of ripe strawberries, freshness of tomatoes, and just a hint of heat from Calabrian chilies, it's a delightful twist on a classic (and coveted) recipe. Serves 4-6
INGREDIENTS:
1 jar Strawberry Marinara
1 small red bell pepper
3 small cucumbers
1 tbsp sherry vinegar
2 tbsp olive oil, plus more for drizzling
Salt and pepper to taste
GARNISH:
1 cup strawberries
1 cup cherry tomatoes
Microgreens and edible flowers
PREPARATION:
Roughly chop the bell pepper and peel, seed and roughly chop the cucumbers. Reserve about 1/2 cup for garnish, which can diced small, and kept refrigerated until serving.
Add all ingredients to a blender and process until smooth. Season to taste with salt and pepper. If too thick, add some water to thin it down. Chill for about an hour or serve at room temperature.
Before serving, cut the cherry tomatoes and strawberries in halves (or quarters if big).
To serve, divide the gazpacho into 4-6 bowls, add garnish and drizzle with olive oil.
