Penne is the Italian word for “pens” because they are cut in the shape of quill pen tips. This particular kind, called birigate due to the ridges in both the outside and inside, plus their angled opening give them lots of surface area for sauce to cling on to, as well as for scooping up extra ingredients you’ll be adding to your pasta dishes at home.
